When will the bread be

The shop's roots lie in Aga Town, Niigata Prefecture. The Yanagiuma couple moved to Aga Town as part of a regional revitalization program and opened "Okuaga Combily," a shop selling bread and snacks. Later, while keeping their existing shop open, they opened "Pan Itsuzou" in Nishiarai, the hometown of the wife, Saori, with the desire to share the charm of Aga Town's local products with more people.
The shop offers bread and baked goods made with organically grown ancient wheat from the Agano River basin, as well as indigenous Japanese walnuts and other organic ingredients. From hard-crusted breads that exude the aroma of wheat from their golden-brown color, to sandwiches generously filled to whet the appetite, to cheesecakes and pound cakes, the selection is so extensive that you'll be spoiled for choice. "We also carry ingredients from Agano Town in addition to bread," says Saori. This bakery, which also functions as an antenna shop with a wide variety of groceries in addition to local sake, rice, and miso, is truly intriguing.

Fig and walnut bread, a delightful combination of red wine-soaked figs and wild walnuts. Epi bread that lets you savor the original flavor and aroma of bacon. Rodève bread, with its 100% hydration rate, is chewy and has a fun texture from the mixed grains.

Saori has a career as a pastry chef, and that experience is reflected in her bread making, resulting in bread that stands out for its appearance and texture.

Shinnosuke Bagels

When owner Dai Sato decided to open his shop, he envisioned a bakery specializing in just one item. Needless to say, he loves bagels, and he says they "hold the potential for a wide variety of variations." His bagels have an exceptional balance of dough, fillings, and toppings. Once you bite into them, the chewy texture and springy elasticity leave you wanting more.
The compact shop is lined with around 40 kinds of freshly baked bagels, making it fun to choose just one. The ideas for the wide variety of bagels are not gimmicky, but are often inspired by familiar savory dishes and sweets. When it first opened, the owner ran the shop alone, focusing on bagels, but as he trained staff, the variety of baked goods also increased, and it is filled with delicious treats that you will never tire of, no matter when you visit.

The combination of edamame, smoked pickled radish, and cream cheese is a brilliant idea, typical of Mr. Sato, who hails from Akita. It would probably go well with beer too.

They say that ideas for new bagels and sweets sometimes come from conversations with staff. The honey lemon flavor is seasonal.
Shop owner Dai Sato says, "I will continue to make bagels that you'll want to eat every day and that you'll never get tired of."

BAKERY Yasubee.

Although it's a bit of a walk from the nearest Rokucho Station, the shop is constantly bustling with customers, making that a definite disadvantage. There are several bus stops nearby, so when asked why he chose this location, owner Noriaki Yasuda replied, "I lived around here when I first came to Tokyo, so I was familiar with the area." He honed his skills for about 20 years working at a bakery and a Western-style restaurant before opening his current shop in 2023.
The counter shelves are lined with about 50 kinds of bread. Many of the items are popular, and it's not uncommon for them to be running low on stock or even sold out by early afternoon. Driven by an insatiable desire to explore bread-making, Yasuda actively attends workshops for other bakers. "Every encounter with ingredients is a once-in-a-lifetime opportunity. If I find something I like, I want to make improvements to even our popular standard products," says Yasuda. His passion is evident in the bread he makes, which continues to evolve and become more delicious every day.

On Saturdays and Sundays, they have a wide selection of burgers, including croquette sandwiches, chicken tatsuta burgers, and fish burgers.

These cream buns, filled to the brim with cream, are a hot topic at bread events. The dough is made with eggs from Nikko, resulting in a rich flavor that will leave you wanting more after just one bite.
"We are always striving to evolve our bread-making process, not just settling for the current level of deliciousness," says Yasuda.

AREUM BAGEL Kita-Senju Store

Bakery Ten, a popular bakery cafe in South Korea, has produced a bagel specialty shop. Since opening its first store in the spring of 2025, it has quickly become a sensation and is rapidly expanding with multiple locations.

The most distinctive feature is the chewy, fluffy texture achieved through a uniquely refined manufacturing process. The high-hydration dough is boiled and then baked, resulting in a substantial weight and size that makes it very satisfying. The rich aroma and flavor of wheat spread with every bite. The bagels, baked fresh in-store every morning, come in 11 varieties, including plain, sweet, and savory cheese-based options. They sell out once the day's supply is gone, and sometimes they're completely sold out by early afternoon, so expect a queue.

The top three best-selling items are all sweets. Among them, the salted chocolate has a texture similar to molten chocolate when warmed. The rock salt adds a nice touch and makes it the most popular item.

It's a substantial portion that can be enjoyed as a meal, and it pairs perfectly with wine or beer. It would also be a hit at potluck parties.
