Sushi Yoshi

Established over 30 years ago, the restaurant is now run by the second-generation owner, Mitsuaki Matsumura, and his mother, who will greet you with a warm welcome. In addition to the menu written densely on a whiteboard, there are many strips of paper posted on the walls. The opportunity to choose delicious seasonal dishes while being distracted is one of the charms of this unpretentious town sushi restaurant.

"I want people to feel more comfortable eating sushi at their local sushi restaurant," says Matsumura. With that thought in mind, he is determined to offer sushi at a reasonable price. Utilizing the strength of reliable procurement inherited from his predecessor, he is dedicated to his Edomae sushi work until he is satisfied. While there are many ingredients he is proud of, his boiled conger eel nigiri, which is soaked in broth until just before serving, is exceptional. Matsumura's style is to serve it without applying any sushi sauce, letting the aroma of yuzu shine through. The fresh texture of the sushi, which is saturated with broth, makes it simply delicious - this is the skill of a sushi chef.

"The reason we have so many snacks and a la carte dishes is because our predecessor was a big sake lover," says Matsumura, who also loves sake and will enjoy a selection of excellent sake that he has discovered with his own taste buds and feet. For example, the four-type hot sake tasting set is popular even with people who are not familiar with sake or warm sake, as two types are served at a time so that the sake doesn't get cold.

The signature boiled conger eel nigiri is a must-try. The tiger prawns are cooked half-cooked, which brings out their sweetness and gives them just the right texture (although they may not be served half-cooked during busy times).

The egg mixture is flavored with dashi and the extracts of seafood such as white fish, shrimp, conger eel, and scallops are dissolved into it, making it a very popular dish.
Following in the footsteps of his predecessor, he has been running the restaurant for 16 years. Whenever he comes across an ingredient or drink that catches his eye, he thinks about how to make it even more delicious.

Sushi and Charcoal Grill Daichi

Perhaps it's the casual, modern atmosphere and cheerful staff that make it seem like a creative Japanese restaurant until you see the menu. In fact, it's a restaurant equipped with a fish tank where you can enjoy authentic Edomae sushi made with freshly caught live fish.

The rice used is Yukiwakamaru from Yamagata Prefecture, carefully selected to ensure a perfect balance with the toppings. It is characterized by its firm grains. Furthermore, the rice is finished with a blend of vinegar from a long-established brewery that is highly trusted by Edomae sushi chefs. They spare no effort in adding salt and boiled soy sauce to each topping so that it can be eaten as is. For example, they are particular about using several different types of salt, including seaweed salt, rock salt, and snow salt.

There are always around 30 types of sake on offer, and a popular three-variety tasting set is also available. "We combine different flavors, from sweet to dry, so it's a great opportunity to find out what type you like," says Manager Watanabe. In the midst of our sake discussion, we learned that in addition to sushi, charcoal grills are also two of the restaurant's signature dishes, and that oden, which is available from the chilly season, is also popular, so we're sure to find ourselves visiting more and more.

Five pieces on one day. The nigiri sushi is seasoned with special salt and soy sauce to match the ingredients, so you can enjoy it as is. The ingredients change depending on the day's stock.
[Crab and salmon roe potato salad 748 yen, 1 cup of sake from 869 yen]
The potato salad is simply seasoned to retain the texture of the potatoes. It is mixed with salmon roe marinated in soy sauce and salted shredded crab, making it the perfect snack to go with alcohol.
Manager Noriaki Watanabe has been in charge of the sushi kitchen since the restaurant opened in 2021. He is skilled at preparing everything from sushi to grilled and fried dishes, and he enjoys serving them to you.

Kikusushi (Kikuzushi)

Entering through the white noren curtain and pulling the lattice door gives off an air of luxury. The store may look intimidating, but once you enter, you'll find yourself enveloped in a very peaceful atmosphere.

Lunch includes nigiri sushi and chirashi with salad and a bowl of soup, starting from 1,210 yen. As you can enjoy Edomae sushi at a reasonable price, the restaurant is constantly filled with customers until the last order. It is said that many people visit in the evening after enjoying lunch.

The restaurant's motto is to use only seasonal, natural ingredients and to serve them with the utmost care. Their sushi, made with Hokkaido Nanatsuboshi rice and rice seasoned with red vinegar and mixed vinegar, is priced at around 300 to 500 yen per piece. Their highly creative sushi is also a specialty. A quick glance at the menu reveals a wide selection of appetizers, grilled dishes, simmered dishes, and steamed dishes, making it hard not to stop for a drink. They also have a selection of renowned sake that complements the flavor of the sushi, and before you know it, you'll be busy picking at the sushi and lifting the sake cup to your mouth.

The chewy, thinly sliced fish is topped with liver and ponzu jelly, and is garnished with grated maple leaves and sprouts of green onions. Each ingredient blends together in your mouth for a truly blissful bite.
[Medium fatty tuna 616 yen]
Pay attention to the neatly cut edges of the knife, which make you imagine the melt-in-your-mouth texture and smoothness even before you eat it.
[Simmered conger eel snack 2,090 yen]
The conger eel is lightly grilled and then coated with a light tsume sauce just before serving (the photo shows it before the sauce was applied). Thinly sliced cucumber is hidden underneath the conger eel.
