Jagi Hanten
Jagi Restaurant was reborn after moving from the east exit to the west exit of Kitasenju in June 2024. It has moved from a street-level store to the top of a building, and now has an exotic atmosphere with a deep interior reminiscent of the backstreets of Hong Kong or Taiwan.
Of course, the signature dish, gyoza, is still available. The recipe is based on the local Chinese gyoza that the owner, Motoki, loves, and has been adapted and researched extensively. It is characterized by being filled with a generous amount of vegetable-based filling, and the flavor spreads slowly with each bite.
The dumplings are made with custom-made thin skins and are served with a chicken sauce or wrapped in lettuce, creating a playful menu that is appealing. The restaurant has a laid-back, local Chinese izakaya-style atmosphere, making it a convenient place to go for a quick drink or a full meal.

The gyoza dumplings are large and the chewy skins are custom-made. The cabbage and pork filling is mainly vegetables and has a gentle flavor, with a hint of garlic for a punchy taste. They are voluminous but not heavy, so you'll likely eat as many as you like.

The boiled dumplings (left) are characterized by their thin skin that feels smooth like wontons. They are topped with a spicy sauce that has a hint of black vinegar. The lettuce roll dumplings are a popular item at this restaurant, consisting of boiled dumplings wrapped in lightly parboiled lettuce.

Gyoza Takeshi
Nishiyama, who used to work at a popular ramen shop, started this restaurant because "he loved gyoza." The menu is simple, consisting of pan-fried gyoza and boiled gyoza, as well as a few small side dishes. The main dish, gyoza, combines pork with cabbage, chives, spring onions, garlic, and ginger, creating a perfect balance that allows you to really enjoy the flavor of the meat. The gyoza skins are thin and small, and are custom-made by a noodle shop in Shizuoka that Nishiyama has always loved.
The restaurant was originally an okonomiyaki restaurant, so the pan-fried gyoza (dumplings) cooked crisply on the hot plate are particularly exceptional. Both pan-fried and boiled gyoza are made using the same gyoza, but it's surprising how much the taste can change depending on the cooking method.
As the owner used to work at a ramen restaurant, the snacks such as bamboo shoots and seasoned eggs are authentic and delicious, and can be enjoyed casually with alcohol.

The gyoza are well-seasoned and go perfectly with rice. It comes with soup, a side dish, and rice. You can choose your favorite pan-fried or boiled gyoza and side dish from about five different options.

The price for a single gyoza (boiled or pan-fried) is a bargain, with five pieces included. The smooth and delicious boiled gyoza makes a perfect snack to go with beer. You can eat them as they are, or add chili oil or soy sauce to your liking for a more delicious experience. The same selection of snacks as the small dishes included with the set meal are available from 150 yen.

Baked Xiaolongbao Gyoza Kibo Rokucho Main Branch
Owner Takashi Ishiguro was backpacking around the world when he encountered xiaolongbao in Shanghai, where he fell in love with them. He eventually honed his skills at Chinese restaurants in Japan and in Shanghai, before opening a baked xiaolongbao stall in Kita-Senju. He then opened a takeout-only store in Hitotsuya, Adachi Ward.
The main menu items are baked xiaolongbao and two types of gyoza with completely different skins and fillings. They use "Hokkaido Nakashibetsu Milky Pork" delivered directly from a contracted pig farm in a refrigerated state, and are said to be particularly particular about freshness when preparing their products. They are also particular about the skins, kneading flour and water in-store every day to make the dough, and then carefully rolling out each skin with a rolling pin before wrapping it.
Although it is a take-out specialty store, you can also enjoy freshly baked bread. Stopping by on your walk and enjoying a freshly baked bread might be a nice little treat.

These large dumplings feature hand-stretched, chewy skins and have the perfect balance of skin, filling, and sauce. They contain no garlic or chives, so you can eat them anytime. They are "gyoza skins" that are as juicy as Xiaolongbao.

"Body-building gyoza" is packed with 9 kinds of domestically grown vegetables, including cabbage, Chinese cabbage, onion, chives, carrots, and celery, making it a nutritious dish. The crispy, fragrant skin has also been selected as part of the "Body Support Menu" promoted by Adachi Ward.

This is the shop's signature product. The soup uses natural collagen, which is made by slowly simmering pig skin over low heat for a long time. Using techniques learned in Shanghai, the skin is hand-stretched and wrapped one by one, and you can see it being done in the store.
