Handmade soba Chobee

``Teuchi Soba Chobei'' was founded in 1980 (Showa 55) and is housed in a stately old folk house. A tatami room with a high ceiling, thick beams and pillars, and an alcove. You can enjoy handmade 100 percent soba noodles made with homemade flour in a restaurant that feels like you've been invited into an old home.
店主の来海伸幸さんは「千寿 竹やぶ」で修業した後、理想とする蕎麦を探究し、玄蕎麦を買いつけて選別や皮むきから手がけるスタイルに。その日使用する分を石臼で挽き、つなぎなしの十割蕎麦を手打ちします。もり蕎麦のつゆは本カツオ節を使用、かけ蕎麦のつゆはサバとソウダガツオと使い分けます。酒肴は素材にこだわったらっきょう漬けや天ぷらなどが揃い、厳選した純米酒とともに。営業は午後4時までの売り切れじまい。昼下がりに蕎麦前から始めて頃合いに蕎麦を注文する、贅沢で粋なひとときを楽しみましょう。

A rich sweet and sour pickle using rakkyo from Tottori. We use mozuku vinegar from Noto, which has a delicate texture. Grilled wasabi with wasabi. For sake, we have a selection of pure rice sake with a refreshing taste.

We use buckwheat flour mainly from Ibaraki, Aizu, and Chiba. By grinding whole soba noodles after peeling the shells, you can get beautiful soba noodles with a bluish tint. You can enjoy the fragrant, chewy yet smooth taste.

The owner, Mr. Kurumi. ``During the new soba season, I'm very busy converting the soba noodles into whole pieces.''

Soba Restaurant Hatsumi (Soba Restaurant Hatsumi)

It's a restaurant near Takenotsuka Station that you can easily stop by when you're looking for a bowl of delicious soba noodles. You can enjoy soba noodles handmade by the owner, Atsuya Goto, and a wide variety of side dishes.
One of the popular menu items is the ``drink set,'' which includes two a la carte dishes, soba noodles, and sake. Choose from seven types of dishes that are perfect for pairing with alcohol, such as grated whitebait made from Lake Hamana and homemade soba miso. The chewy, thin Nihachi soba noodles are made by hand every day using buckwheat flour from Hokkaido, and can be enjoyed as a meal or with alcohol. The bar is popular for its high degree of freedom in choosing not only cold sake and shochu, but also beer and highballs.
Many people come here both day and night to eat, and some look forward to the limited-time menu items such as the summer ``Lemon Soba'' and the ``Spicy Oroshi Soba'' made with spicy daikon radish. On Saturdays, Sundays, and holidays, we also offer ``Juwari Soba'' (limited to 10 servings), which is made with Hokkaido-produced soba flour. If you want to eat it, we recommend arriving early.

[Drink set (soba miso, grated whitebait, mori soba, highball) 1,700 yen]

Soba miso is made with Hatcho miso and plenty of buckwheat, and the fragrant flavor and texture of soba makes it a great drink. You can choose soba noodles from mori or kake.

The owner, Mr. Goto, came from a Japanese restaurant in Osaka, and he uses light soy sauce for the soup stock, which he uses to change the soup stock. You can simply enjoy the harmony of smooth soba noodles and Kansai-style soup.



Opened in 2011, it has gained a reputation for its exploration of soba noodles and its commitment to ingredients. “I look for new ingredients and go to roadside stations in the Kanto area on my days off,” says Goto.

Tengu Soba Yabuchu

Founded in 1986 (Showa 61). Although it is located by bus from the nearest station, there are many fans who visit from far away. The reason for its popularity is the taste of the dishes, including the homemade flour soba made by the owner, Nobuyuki Koshitaka. The store also has a folk art style that uses a lot of wood. The inside of the restaurant is decorated with giant tengu masks and old utensils, which will liven up your dining experience.
Among the many menu items, one that you definitely want to order is the ``Sashimi Konnyaku'', which is handmade using konnyaku potatoes grown in Gunma Prefecture. The chewy texture is exquisite, and it goes great with alcohol. The Nihachi soba noodles are made by hand from Hokkaido-produced soba that is ground in a stone mill and are thick enough to easily get caught in the dipping sauce. It's filling, but it's easy to swallow, so many people order a large portion. The owner's fun tricks are also popular, such as ``Ichisho Soba,'' which can be shared in portions for 4 to 5 people, and ``Nama Hiyamugi,'' which is served in ice bowls in the summer.

[Sashimi konjac 450 yen, miso dengaku 450 yen, soba shochu with hot water 480 yen]

The vinegared miso for the sashimi konnyaku and the sweet miso for the miso dengaku are also homemade. The shochu, which is mixed with soba hot water that has absorbed the flavor of the soba noodles, is easy to drink, and the glass empties in no time.

[Duck soup steamer 1,100 yen (large size 1,350 yen)]

A signature flavor of chewy soba noodles with duck meat and grilled green onion soup. The flavor of the duck meat melts into the strong soup stock made with bonito flakes, and it's so delicious that you'll want to add soba hot water to drink it all down.

Another reason for the cozy atmosphere is that you can feel the personality of the customers, such as by posting quotes that have impressed them inside the store.

Handmade Soba Jyukichi

The store was opened in 2004 by the owner, Shigeru Ogata, who trained at famous restaurants in the city. This is a famous restaurant that continues to capture the hearts of soba connoisseurs by serving Juichi soba that pursues flavor and aroma while valuing traditional techniques and attitudes.
We use locally sourced soba noodles from all over the world, from Hokkaido to Kagoshima, and are recommended at that time of year, and mill them in our store's stone mill. We create hand-made soba noodles made from buckwheat flour, which ``brings out the full flavor of soba while also being pleasant to swallow.'' The menu includes standard soba dishes such as grilled miso, dashimaki omelets, kamoyaki, and tempura, all of which can be enjoyed with seasonal sake.
It's also popular to order tempura, then have tempura and sake, then finish with soba, and you can even see solo customers enjoying it with beer in the early afternoon. At noon, many people come for the combination of rice and soba noodles, such as tempura bowl and oyakodon, and there are also great value sets available only on weekdays.

Enjoy Mori Soba using local varieties of soba with a rich aroma and flavor. Served with a sharp and spicy soup. The shrimp and seasonal vegetable tempura has an exquisite batter.



The soba making room at the back of the store was designed based on a horse chestnut kneading bowl. ``We pursue the flavor of soba while valuing the tools and manners that we learned from our master who was born in the Taisho era,'' says the owner, Mr. Ogata.
